Ingredients
- 3-4 lb Venison Roast
- 1 tbsp. Rosemary
- 1 tsp. Pepper
- 1 tbsp. Smoked rosemary
- 3 tbsp. butter
- 4 cloves garlic
Directions
- Set your Anova Sous Vide Precision Cooker to 130.0ºF / 54.4ºC.
- Rub paprika, 1/2 tbsp is rosemary, pepper onto roast.
- Put roast in bag and cook in sous vide for 24 hrs
- Remove roast and pat dry. Allow to sit for 10 min.
- Preheat cast iron pan on high. Throw in butter, garlic, and rosemary.
- Sear roast 1-2 min on each side. Spooning aromatic butter/garlic/rosemary over roast.
- Remove roast, let sit for 5-10 min. Slice and enjoy.
