Sous Vide Vegan Vanilla 'Caramel' Sauce

This is the easiest caramel sauce you will ever make (without even using caramel). Dates are what make this sauce taste like caramel. It's great for coffees, ice cream topping, or just eating right from the jar. It's dairy-free and has no refined sugar.

  1. Set the Anova Sous Vide Precision Cooker to 135ºF / 57ºC.
  2. Add the dates and nondairy milk to a plastic zip-seal bag and close. Put the bag into the sous vide and cook 2 hours.
  3. Gently pour the cooked mixture into your blender - remember it will be hot!
