This is fantastic! This temp and time takes the thicker pieces to medium and the thinner to medium. I cut the long strip down to the serving size steak for two reasons. The first is the cut across the grain when serving, this makes it tender for the person eating it. You can see in the pic how it's almost falling apart when sliced properly. For people who like well done steak this is the best type of steak for that. If you taste test, the medium well to well done actually has more flavor than medium rare! Make your favorite chimichurri and you are in Brazil it Argentina!

  1. Cut steak into portion size steaks before you place in sealed bags. Keep it simple, use your favorite steak rub or just season with coarse salt, pepper and garlic powder.
  2. Add to your pre heated water. Set it and forget it!
  3. After 2 hours, take them out and put on paper towels and pat dry the tops. Now your ready for searing!
  4. Sear 45 seconds Flip and sear 45 seconds Flip sear 45 seconds Last flip 45 second sear... DONE to perfection!
  5. No need to rest the steak like normal grilling. Look at the grain of the meat and slice across the grain. Very important step! This gives it the tenderness! Normally this steak is chewy, it's because it wasn't cut across the grain of the meat! Enjoy with your favorite chimichurri recipe. I added a recipe in case you don't have one.
  6. Chimichurri Recipe INGREDIENTS 1/2 cup olive oil 2 tablespoons red wine vinegar 1/2 cup finely chopped parsley 1/2 lemon juice 3-4 cloves garlic , finely chopped 2 small red chilies , or 1 teaspoon red pepper flakes 3/4 teaspoon dried oregano 1 level teaspoon coarse salt and pepper to taste (about 1/2 teaspoon) Mix ingredients in bowl. Let rest for an hour mix periodically with a spoon. I don't use a blender or mixer. I like chopping the ingredients by hand. The parsley keeps its shape and doesn't become mushy. Enjoy authentic chimichurri!

Finishing Steps

  1. Several ways to sear. Use your grill on high, I have a sear box on the side. Use a torch or sear gun. Use a skillet on high heat with avocado, canola or peanut oil. These three have high temp smoke points. 45 seconds on each side for a total of 4 flips!
