Ingredients
- 3 cups 80 proof vodka
- 6 vanilla beans
Directions
- Split each bean lengthwise and scrap seeds into vodka.
- Cut remaining split beans into two pieces
- Place vodka mixture into 3 sterilized pinto jars. Do not fill jars above bottom screw ring.
- Place sterilized lids and rings on jars. Tighten rings only to finger tightness, if it is over-tightened. The jar will break.
- Place jars in sous vide at 140° for no more than 8 hours.
Finishing Steps
- Remove jars from sous vide and cool. Shake jars once or twice per day for 3 weeks.
- Put vanilla into clean decorative jars. I include beans and seeds. Label and it is ready to use.
