Rosemary-Citrus Lamb Chops

Ingredients
- Lamb Chops - 2x
- Rosemary - 1 sprig (chopped)
- Garlic - 2 cloves
- Fresh Lemon Juice - 1 tbs.
- Salt + Pepper - To taste
- Olive Oil - 2 tbs.
Directions
- Set the Anova Sous Vide Precision Cooker to 135° F
- In a bowl, mix together garlic, lemon, olive oil, salt, and pepper
- Rub the mixture into the lamb and place the lamp chops in a zip-top bag
- Seal the bag using the water displacement method. Set the timer to 2 hrs. and cook
Finishing Steps
- Pat dry the lamb chops and let chill in the refrigerator for 10-15 min.
- Sear for ~1 min. per side to caramelize the outside
- Let rest for 5 min. before serving
