  1. Set the Anova Sous Vide Precision Cooker to 135° F
  2. In a bowl, mix together garlic, lemon, olive oil, salt, and pepper
  3. Rub the mixture into the lamb and place the lamp chops in a zip-top bag
  4. Seal the bag using the water displacement method. Set the timer to 2 hrs. and cook

Finishing Steps

  1. Pat dry the lamb chops and let chill in the refrigerator for 10-15 min.
  2. Sear for ~1 min. per side to caramelize the outside
  3. Let rest for 5 min. before serving
