- Unsalted Butter
- Black Pepper
- White Pepper
- Garlic Powder
- Onion Powder
- Paprika
- Brown Sugar
- Fresh Thyme
- Unsalted Butter
Directions
- Start by depressing the drum from the thigh. Then carefully remove the bone from the thigh. Combine all the dry rub and season on all sides of the drum and thigh.
Place both items in two separate bags and add fresh thyme and 1 tablespoon of unsalted butter to each bag.
Seal both bags and place for 3hrs - overnight in the fridge
- Set the bath for 63.6C/24hr and let it cook! Place cover on bath to avoid excessive evaporation.
