Ingredients
- Chicken Wings
- Salt
- Buffalo Sauce
Directions
- Preheat your water bath to 160°
Lightly salt and seal your wings in a bag.
- Drop into your 160° water bath and set a timer for 2 hours.
- After two hours, remove chicken from the bag, let cool in the fridge, overnight on a wire rack
- 6-8 hours later (or the next day), preheat your grill or cast iron skillet—get it hot! The fridge step is crucial to help dry the wings to prevent a gummy-like texture. 24+ hours in the fridge is best! These will last for up to 3 days in the fridge, uncovered.
Sear the wings for 2-3 min per side.
- Toss in Buffalo sauce and return to the grill or cast iron for 1-2 minutes more.
Finishing Steps
- Serve with Ranch, Blue Cheese and/or celery and carrots!
