  1. GENEROUS amounts of Montreal seasoning, rub in.
  2. Optional: sear on the bbq at highest heat, this just adds crispness to the bite.
  3. Seal in vac bag. You can use the submerge in a zip lock, but a vac prep makes the meat absorb the seasoning.
  4. Either cook right away or freeze for another day. I buy the dual pack from Costco so I always freeze one. No need to adjust cook time for fresh or frozen. It’s thaws quickly in the water..
  5. Cook, you don’t have to use the full 24hrs, but you can also let it cook for 48hr if your meal plans change!
