  1. Set your Anova Sous Vide Precision Cooker to 132.0ºF / 55.6ºC.
  2. Season tri tip with Kosher Salt. Place in large Ziplock bag and add two sprigs of Rosemary on each side of Roast.
  3. Place roast in water bath for four hours.

  1. Let meat stand for 10 minutes in bag. Remove from bag, and pat dry.
  2. Sear quickly on very hot charcoal grill. Slice against the grain, serve with baked potatoes and sautéed mushrooms.
