Directions

  1. Set beef aside and get to room temp
  2. Set your Anova Sous Vide Precision Cooker to 125.6ºF / 52.0ºC.
  3. Generously season topside with salt, pepper and thyme and rub with olive oil
  4. Vacuum seal and drop in the water

Skillet Sear

  1. Pour out excess liquid (save for a nice gravy)
  2. Heat a skillet with vegetable oil until smoking or oil is shimmering
  3. Pat topside dry with a paper towel
  4. Use metal tongs to sear all sides
  5. Cut and serve!
