Ingredients
- Olive oil
- Topside beef
- Salt
- Pepper
- Thyme
- Vegetable oil
Directions
- Set beef aside and get to room temp
- Set your Anova Sous Vide Precision Cooker to 125.6ºF / 52.0ºC.
- Generously season topside with salt, pepper and thyme and rub with olive oil
- Vacuum seal and drop in the water
Skillet Sear
- Pour out excess liquid (save for a nice gravy)
- Heat a skillet with vegetable oil until smoking or oil is shimmering
- Pat topside dry with a paper towel
- Use metal tongs to sear all sides
- Cut and serve!
