  1. Mix chilli powder, paprika, and garlic powder and rub all over roast
  2. Bag roast and add two sprigs of rosemary and two sprigs of thyme to bag before sealing
  3. Preheat water
  4. Add bag to water and cook with ANOVA until timer beeps
  5. Remove bag from water and let roast rest for 30 minutes

Finishing Steps

  1. Heat canola oil in pan on stove until shimmering
  2. Pick up roast with tongs and sear for 1-2 minutes on all sides
  3. Set roast aside to carve
  4. Add bag juices to same pan to make sauce
