Flavorful, tender, and juicy, it holds seasoning really well and cooks beautifully. Purchase top sirloin cap steak from Costco in bulk; if not using all of it immediately, the raw steak freezes well.

  3. Seal in Ziploc and sous vide for at least 3.5hrs
