Delicious recipe for a 2.5lb tomahawk steak! Reddit users recommend to sustain the temp over 135 for best fat breakdown. The first time I made this (example in photos) I sous vide at 137° for 4 hours and it was a bit rare for my preference. I recommend 139° for medium.

Directions

  1. Salt steak heavily and place uncovered in fridge for a minimum of one hour (overnight is preferable).
  2. Add liberal amounts of pepper and/or rub
  3. Sous vide for 4 hours

Finishing Steps

  1. Sear on hot skillet or grill
  2. Add butter while grilling
  3. Allow to rest for 10 mins before cutting
