This recipe makes a medium to medium well top sirloin. I did a reverse sear for 1:30 on each side, turning at halfway on each side. For a pinker medium, I suggest setting the temperature to 128°. For a medium rare, I suggest setting temp to 123–125° and reverse sear for about 1 minute to 1:15 on each side, turning at halfway on each side.
