  1. Set your Anova Sous Vide Precision Cooker to 145.0ºF / 62.8ºC.
  2. Season pork chops liberally
  3. Place in bag with fresh thyme sprigs or other aromatics
  4. Place bag under the water bath for 1 hour

Stovetop

  1. Get a pan ripping hot
  2. Remove pork from the bag and pat dry on both sides
  3. Slit through the fat on one side of the chops to prevent them from curling in the pan
  4. sear the chops until golden brown on both sides
