  1. Set your Anova Sous Vide Precision Cooker to 140.0ºF / 60.0ºC.
  2. Brine first, apply pork dry rub to surfaces. Seal in plastic bag.
  3. Cook for ~1.5 hours
  4. Remove from bag, dry chop, sear over high heat in pan with a little oil. 45-60 seconds per side, sear edges.

Finishing Steps

  1. Preheat skillet/grill to medium high. Remove from bag, pat dry. Oil pan with canola, heat till shimmering, near smoking. Add chop(s), sear 30-45 sec, then flip. When both sides browned, sear sides of chop, then serve.
