Difficult cut to find, had to order it online. Fork tender and better than filet in my opinion.

Ingredients
- Salt & Pepper to taste
- 1/4 stick butter per steak
- Fresh Rosemary
- Fresh Thyme
Directions
- Season liberally with Salt & Pepper
- Vacuum seal with butter & herbs on top
- Cook 2 hrs @ 135.5 for rare, 145 for medium rare!
- Melt blue cheese crumbles and serve with mashed potatoes!
