Ingredients
- Sweet potato 1kg
- Garlic
- Olive oil
- Herbes provencale
- Salt and pepper
- Fresh chopped mint leaves
- 100 ml yogurt
- Spoonfull Mayonaise
Directions
- Peel the potatoes
Cut large fries
Frie in plenty of oil some garlic and add the herbes Provençale
Allow garlic herbes oil to cool
Mix garlic oil and fries
Vaccuum seal in bag
- Cook 1 hour at 85 C in anova sous vide water bath
- Remove fries from bag and deep fry in oil till nice and crisp
Finishing Steps
- Serve with a fresh chopped mint and yogurt and mayonaise sauce for dipping
