Sweet and Spicy Salmon

Ingredients
- 1Tbs brown sugar
- 1 tsp kosher salt
- 2 tsp ancho chilli powder
- 1 tsp ground cumin
- Fresh cracked black pepper
- 4 6oz salmon fillets
- Honey for drizzling
Directions
- Mix all the rub ingredients together
- Coat both sides of the salmon in the rub
- Cook sous vide at 115 degrees for 45 minutes
- Carefully remove the salmon from the bag, heat a drizzle of oil on a skillet over high heat and sear both sides until crisp, less than one minute per side.
- Plate and serve with a drizzle of honey
