  1. Combine 2 pounds ground beef with one raw egg to hold it all together. Season well with salt and pepper. Form 1“ high round patties. Create pocket and insert fillings: pastrami, blue cheese, Colby Jack– pinch pocket closed well. Use water displacement or pulse vacuum on food saver to maintain shape and depth. Place bags in bath, adding weight to fully submerge.

Finishing Steps

  1. Remove burgers from bath and sear with butter in CI for 45 seconds per side, with an additional 45 seconds to melt cheese on top.
