- Set your Anova Sous Vide Precision Cooker to 53.9ºC / 129.0ºF
- Marinate the meat in rosemary oil, salt and pepper
- Place the meat carefully in the vacuum bag and seal it
- Place meat in the preheated sous vide bath for 3hrs @ the defined temperature
- After the sous vide process has been finalized: Take the meat out of the vacuum bag and dry it carefully using kitchen tissues.
- Fire up sizzle zone and wait for 1-2 minutes until target temp has been reached (approximately 850 degrees)
- Put meat on sizzle zone for approximately 20-30 seconds from each side
Finishing Steps
- Serve the meat. No waiting time is required.
