  1. Set your Anova Sous Vide Precision Cooker to 129.0ºF / 53.9ºC.
  2. 129-134 (less if thinner) 1-4 hrs
  3. Season generously with salt and pepper
  4. Add aromatics like rosemary or thyme

Cast Iron

  1. 1tbsp oil. Smoke Some butter
  2. Flip every 15-30 seconds until seared
  3. Torch while on the last few flips of the pan
