Sous Vide Sirloin- Steakhouse Style
This recipe is reminiscent of tender and savory, steakhouse recipes. My entire family enjoyed this recipe immensely!

Ingredients
- 5-6 well marbled sirloin steaks (3 lbs)
- Coarse kosher salt
- Pepper
- 2 garlic cloves per pound of steak
- Onion powder- reserve til searing steak
- 1.5 TBS each of Ghee and canola oil
- Thyme- optional
- 1 cup beef broth
- 1-1.5 cups wine
Directions
- Set your Anova Sous Vide Precision Cooker to 130ºF / 54.4ºC
- Season steaks well with s and p, and lightly season with thyme if desired.
- Vacuum pack into bags Or use ziplock with water immersion technique, and clip to side of pot, when temp reaches 130.
- Cook at 130 for 1.25 hours
Finishing Steps
- During last 15-20 min of Sous vide cooking, preheat oven at 425, with clean, large cast iron skillet inside oven to heat.
- When time ends on Sous vide, open bags and dry steaks well w paper towels. Then transfer skillet to stove top; add 1.5 TBS of ghee and 1.5 TBS of canola oil into skillet on hot burner.
- Sprinkle steaks w onion powder (and additional s and p if strong flavor is desired).
- Sear steaks on very hot stove top, approx 1 min per side. And serve!!
