Ingredients
- 2 racks of lamb
- 2 teaspoons salt
- 2 teaspoons black pepper
- 1 teaspoon rosemary
- 1 teaspoon meat seasoning of your choice
- Canola or vegetable oiling for searing
Directions
- Set Anova Sous Vide Precision Cooker to 140°F / 60°C
- Season lamb with salt, pepper, rosemary, and meat seasoning.
- Place in vacuum bag or resealable ziplock bag using water immersion method.
- Place in water bath and cook for 4 hours.
Finishing Steps
- Heat oil over medium-high heat until just smoking.
- Sear lamb on both sides for 1-2 minutes per side.
- Slice between bones and enjoy!
