Sous vide leeks with olive oil and parmesan

  1. Start by cleaning the leeks and removing the outer layer, preserving the white and light green part of the vegetable. Place the vegetables in a vacuum bag with salt and a dash of garlic infused garlic oil. Remove the air and seal the bag.
  2. Cook in sous vide on 85 degrees for 30 minutes
  3. When the leeks are ready, brown slightly under the grill or with a blowtorch. You can also brown them quickly in a pan on high heat with little bit of butter or oil.
  4. Serve them seasoned with black pepper, sprinkled with parmesan cheese and drizzled with olive oil. Add fresh chopped herbs.
