Sous Vide Bison Sirloin Steak
Bison is a leaner meat and is great for a sous vide. Season with your favorite dry rub, just garlic or onion powder. I use Mitchell Street from Penzy’s spices for the smokey flavor.

Ingredients
- 8 oz Bison Sirloin Steak per person
- Salt
- Pepper
- Dry rub Steak Seasoning such as Mitchell Street by Penzy’s
- Olive Oil
Directions
- Heat sous vide to 130.
- Season both sides of the bison steak with salt, pepper and steak seasoning. I use Mitchell Street from Penzy’s because I like the smokey flavor. Use what you like.
- Place steak into individual sous vide bags remove air and seal. Cook for 2-4 hours.
- Remove the cooked bison from the bag and dry the meat off well. Heat olive oil in pan and sear the bison on both sides. 1-2 minutes per side.
- Remove from heat and allow to rest before carving.
Finishing Steps
- Made a mushroom pan sauce for dinner with mashed potatoes and then had in a salad the next day. Fabulous and easy.
