Sous Vide Bison Sirloin Steak

Anova Culinary

Bison is a leaner meat and is great for a sous vide. Season with your favorite dry rub, just garlic or onion powder. I use Mitchell Street from Penzy’s spices for the smokey flavor.

Ingredients

Directions

  1. Heat sous vide to 130.
  2. Season both sides of the bison steak with salt, pepper and steak seasoning. I use Mitchell Street from Penzy’s because I like the smokey flavor. Use what you like.
  3. Place steak into individual sous vide bags remove air and seal. Cook for 2-4 hours.
  4. Remove the cooked bison from the bag and dry the meat off well. Heat olive oil in pan and sear the bison on both sides. 1-2 minutes per side.
  5. Remove from heat and allow to rest before carving.

Finishing Steps

  1. Made a mushroom pan sauce for dinner with mashed potatoes and then had in a salad the next day. Fabulous and easy.
