Grilled beer can Chicken!

  1. Set your Anova Sous Vide Precision Cooker to 65ºC / 149.0ºF
  2. Place the chicken, 1/2 of the beer and the minced garlic into a ziploc bag, shake well to evenly distribute the ingredients, seal the ziploc bag and place in the water bath for 2.5 hours.

  1. Remove the chicken from the bag and pat dry. Save 1 cup of the jus.
  2. Cover a medium size baking pan with aluminum foil and place the beer can upright in the middle. Save 1 tablespoon of beer in a cup to the side.
  3. Season the inside and outside of the chicken with salt and pepper.
  4. Take the chicken and gently place the butt end over the beer can so that the chicken balances upright (I cheat and have a beer can chicken holder i got online), it will look awkward, but that is ok as long as it is stable.
  5. Carefully transfer the baking pan and chicken to a gas or charcoal grill. Pour 1/2 of the jus into the baking pan (the vapor will help cook the chicken and the evaporating beer will give it more flavor). Close the lid of the grill and let cook for ~15-20 mins.
  6. For additional flavor, mix the 1 tablespoon of beer with melted butter and baste the chicken at least 3 times during cooking. This will help crisp the outer skin and also give a great taste of beer/butter.
  7. Open the grill top to check the outside crispness of the chicken. Pour the remaining jus into the baking pan and close the grill lid for another ~15-20 mins or until desired outer skin crispness is achieved.
  8. After grilling carefully remove the baking pan and let the chicken cool for 5-10 mins. Then remove the beer can, carve the chicken and serve!
