Temperature Options:

Medium Rare - Buttery tender, very juicy
135F / 57.2C
Medium - Firm but still tender, moderately juicy
145F / 62.8C

Ingredients

Directions

  1. Set the Anova Sous Vide Precision Cooker to 135°F/ 57.2°C for rosy medium-rare, or 145°F / 62.8°C for tender and juicy, but all white.
  2. Season pork with salt and pepper. Spread apple butter generously on pork and bag up with a few sprigs of fresh rosemary.
  3. Place the bag in the water bath and cook for two hours

Gril/Stovetop Finishing Steps

  1. Remove pork from bag, dry well, season again with salt and pepper and cover generously with apple butter.
  2. Sear on a hot grill or in a cast iron pan. (Hot as possible so it's seared as quickly as possible)
  3. Slice, serve, and enjoy!
