Ingredients
- 10 to 12 pounds bone in (5 bones) beef rib (natural with cap and fat in)
- Parrilla salt
- Wood chips for smoke
Directions
- Put your beef rib in a vacuum bag and cook with sous vide Anova for 14hs ...
- Take the bag from sous vide Anova and put in a roast pan.
- Take off the bag and put the beef ribs in a roast pan. Put parrilla salt on both sides.
- Insert in an electrical oven (170 celsius degree) bones up by 1 hour. In a small aluminun device put one cup of wood chips inside the roast pan and close the oven. Take a look sometimes to evaluate the evolution of cooking.
- After 1hour turn the bone down and return to oven to 1h more at same temperature.
Finishing Steps
- After the last hour, turo on the grill at high level temperature and let 10 minutes to absorb golden color ... after this, immediately serve to your guests...
