Sirloin Tip Roast, Simple and Tasty

Now with my new Anova that i gave my wife for Christmas, anything and everything!! Just getting revved up with this thing and i can now challenge my wife’s cooking... until she realizes what’s going on then I’m screwed once she takes it away from me!!

Temperature : 135F / 57.2C

Ingredients

Directions

  1. Set your Anova Sous Vide Precision Cooker to 135ºF / 57.2ºC
  2. Rub salt, pepper, montreal steak spices and 3 cloves of crushed garlic all around your roast and place in ziplock bag
  3. Slowly insert bag in water to take all the air out of it and once just above water line zip seal your bag, clip the top of the bag to the side of your pot and let it go for 24hrs. You will need to add water every 6-8 hrs as you will lose some to evaporation.
  4. After 24 hrs, remove roast from bag, pat dry and place in fridge for 10 min.
  5. Remove from fridge and add a sprinkle of salt all around just before ready to sear

Searing

  1. Add 2 TBS of oil and butter (or garlic butter) to cast iron pan and heat on High
  2. Sear roast for 1 min on all sides at Med/High heat
  3. Remove and rest for 5 min.
  4. Slice the roast and enjoy!
