Simple Scallops
Just a basic cooking of simple scallops. Using large sea scallops not the little ones.

Ingredients
- Scallops
- Salt and pepper
- Butter
Directions
- Vacuum seal the number of scallops that you want into a bag. Be careful not to squish the scallops while vacuuming.
The number of scallops that you prepare determines the number of people that this meal serves. 
-  Place into the sous vide bath and cook for 45 minutes at 130°F.
Finishing Steps
- Remove from the sous vide bath and place the scallops on paper towels to blot them dry.
- Add oil to a small pan, bring it up to very hot temperature, place the scallops into brown. Or one could use a torch or a barbecue or any other method of browning. This step is not absolutely necessary just most people like the color.
- Separately in another pan melt some butter for dipping. Season the scallops to taste. Serve with whatever other dish you plan on serving them with. And enjoy
