Simple Filet Mignon
A simple, yet delicious filet mignon recipe with an optional blueberry sauce.

Ingredients
- 4 - 6-8 oz filet mignon steaks (about 2 in. thick)
- Olive Oil
- Salt and Pepper
- 1 Pint of Blueberries
- 1/2 c Orange Juice
- Salt
- 2 T butter
Directions
- Preheat sous vide to 130 degrees
- Season steaks with olive oil, salt, and pepper.
- I put 2 steaks in a 1 gallon ziploc bag. Two bags with four steaks fit into my pot.
- Immerse bags into water, expelling as much air as possible and zipping the bags shut. Set timer for 2 hours.
- Optional Blueberry Sauce
With about 30 minutes left in your cook time, add the blueberries, orange juice, and a pinch of salt to a saucepan on medium-high heat on the stove. Allow the berries to pop, stirring frequently.
When the sauce is beginning to come together, turn off the heat and add the butter, stirring until melted.
Set aside to be served with steaks.
- Heat a heavy pan (I used black steel) on high heat with olive oil and butter to sear the steaks once the time is up. About 2 minutes per side.
Finishing Steps
- Serving recommendations are mashed potatoes, and a green vegetable. We had asparagus this evening.
