Simple BBQ Pork (Char Shiu)

Tender HK style char shiu that doesn’t need a lot of work!

Ingredients

  1. Cut Pork Shoulder into 1 inch thick slices.
  2. Marinade the pork shoulder for 24 hrs. Make sure you coat throughout.
  3. Transfer meat into a sealed bag and place in the bath for 62C/9hr. Discard extra sauce.
  4. At this point you can place the meat into an ice bath and store in the freezer for later us or continue to cook. Remove the meat from the bag and add extra Char Shiu Sauce to the meat. Place on a rack with water underneath to prevent the drippings from burning. Place the rack into the broiler for 15 min.
  5. Remove from the broiler and coat meat on 1 side with honey. Use a torch to crisp up the skin and char the edges

Finishing Steps

  1. Let the meat rest for a few minutes and begin to cut with a cleaver
  2. Plate with Rice and Veggies. I like it with Ginger/onion oil... but that’s not really proper. Haha
