Sous Vide Short Grain Rice (Sushi Rice)

  1. Set your Anova Sous Vide Precision Cooker to 203.0ºF / 95.0ºC.
  2. Wash short grain rice 4 times (takes 5 mins) and let dry
  3. Add short grain rice and water(1:1) to the bag
  4. Do NOT put rice under vacuum because it needs room to expand(just seal the bag and let the steam in the bag during cooking do all the work)
  5. Submerge it and set timer for 45 minutes
  6. (Optional) if you want to make sushi, add rice wine vinegar 1/4 cup (rice:vinegar=2:1), and stir the cooked rice well. This step will make the rice tastes slightly sour. It’s called “vinegar rice” for making sushi.
