Sous Vide Short Grain Rice (Sushi Rice)

Ingredients
- Short grain rice 1/2 cup (serves 2-3 persons)
- Water 1/2 cup
Directions
- Set your Anova Sous Vide Precision Cooker to 203.0ºF / 95.0ºC.
- Wash short grain rice 4 times (takes 5 mins) and let dry
- Add short grain rice and water(1:1) to the bag
- Do NOT put rice under vacuum because it needs room to expand(just seal the bag and let the steam in the bag during cooking do all the work)
- Submerge it and set timer for 45 minutes
- (Optional) if you want to make sushi, add rice wine vinegar 1/4 cup (rice:vinegar=2:1), and stir the cooked rice well. This step will make the rice tastes slightly sour. It’s called “vinegar rice” for making sushi.
