Thai Sweet Chili Sea Scallops

Ingredients
- 1-1/4 lbs dry sea scallops
- 1/4 cup scallions, sliced
- 1/4 cup Thai sweet chili sauce
- Juice of 1/2 lime
- 3 tablespoons orange juice
- Zest of 1 orange
- 1 tablespoon fresh ginger, very finely chopped
- 1 tablespoon garlic, very finely chopped
- 2 tablespoons butter
Directions
- Set your Anova Sous Vide Precision Cooker to 123ºF / 50.6ºC
- Wash and througly dry scallops with paper towels
- All all ingredients to Ziploc or vacuum sealer bag, leaving space between scallops
- Add scallops to sous vide bath and bathe for 30 minutes
- Take scallops out of sous vide bath and reserve liquid for later
Sear & Plate
- Sear 30-60 Seconds Per Side In Cast Iron Skillet
- Serve with Jasmine rice
