Sardines with grape leaves pesto

  1. Prepare the water bath at 50°C. Put the fillets of sardines inside the bag one beside the other after brushing them with olive oil. Add lime zest, rosemary and parsley, salt and put the bag in the water bath.
  2. Put the grape leaves in a bag and submerge them also in the water bath.
  3. For the pesto: saute the chopped onions with a little bit of olive oil. When the leaves are ready, put all the ingredients for the pesto in a blender and mix everything.

Finishing Steps

  1. Remove the sardines from the bag, pat them dry with a towel and finish them by torching the skin
  2. Put the pesto on toasted bread and top the sardines...
