Sous Vide Stilton Sauce

Ingredients

Directions

  1. Set your Anova Sous Vide Precision Cooker to 60.0ºC / 140.0ºF
  2. Crumble 50g of Stilton into small pieces
  3. Finely chop the onion and garlic
  4. Melt 1 tsp of unsalted butter in a pan on medium heat
  5. Add the garlic and onion to the pan with a pinch of salt and cook until they soften
  6. Add mixture to a zipper bag with the crumbled Stilton
  7. Add a splash of milk, 60ml of double cream and a squeeze of lemon juice
  8. Put in the Anova for 30 minutes

The finishing touch

  1. Remove the bag from the water, and pour sauce into a bowl to make sure it is well mixed
  2. Transfer to your favourite pouring jug, and serve generously over your favourite cut of meat
