Rosemary Pork Loin

This recipe is for a 1/2 pork loin roast not the smaller tenderloin. Cooking at 145 for 3.5 hours produces a very moist and tender yet firm result that can has a classic meaty and not too soft chew.

  1. Set your Anova Sous Vide Precision Cooker to 145.0ºF / 62.8ºC.
  2. Season roast with salt and pepper, place roast in bag, place sprigs of fresh rosemary around roast, add 1 clove of garlic
  3. Vacuum seal
  4. Cook time = 3.5 hours

Grill

  1. Heat grill to high heat and sear roast to desired color.
