  1. Season to taste with kosher salt and fresh cracked black pepper.
  2. Add a tbsp of grass fed butter.
  3. Add fresh rosemary (fresh thyme works, too)
  4. Sous vide at 135 degrees for half hour for medium rare/medium.
  5. Flash sear on a hot cast iron pan until desired doneness.
