  1. Set your Anova Sous Vide Precision Cooker to 130.0ºF / 54.4ºC.
  2. Season steaks with kosher salt, black pepper, garlic, and rosemary sprigs
  3. Arrange steaks separately within a single bag or in individual bags. This helps to ensure that each steak gets the full benefit of the seasoning.
  4. Vacuum seal
  5. Submerse steaks in water bath– I use a small cooler to maintain optimal temperature
  6. Cover with foil to minimize evaporation
  7. Cook for one hour

  1. Preheat pan until very hot
  2. Sear steaks in olive oil for 45 to 60 seconds
