Ingredients
- Pork Shoulder or Leg off the bone
- Coarse Sea Salt (Kosher)
- Pepper
- Butter
Directions
- Remove skin, salt and leave uncovered in fridge overnight on a rack with a pan underneath to catch the water.
- Season Pork Shoulder with Salt and pepper and vacuum pack
- Cook sous vide at 63°C for 17-24 hours
Finishing Steps
- About an hour before serving, can be longer...Pat dry pork skin, season well and put skin on rack ... skin side up, put in oven at 200°C for up to one hour, check after half an hour.
Tip - If you are roasting potatoes, then put the pork skin on the rack above the potatoes so the fat from the pork skin drips onto the potatoes.
- Sear the pork in a frying pan and baste with butter
