  1. Remove skin, salt and leave uncovered in fridge overnight on a rack with a pan underneath to catch the water.
  2. Season Pork Shoulder with Salt and pepper and vacuum pack
  3. Cook sous vide at 63°C for 17-24 hours

Finishing Steps

  1. About an hour before serving, can be longer...Pat dry pork skin, season well and put skin on rack ... skin side up, put in oven at 200°C for up to one hour, check after half an hour. Tip - If you are roasting potatoes, then put the pork skin on the rack above the potatoes so the fat from the pork skin drips onto the potatoes.
  2. Sear the pork in a frying pan and baste with butter
