Ingredients

Directions

  1. Make a paste with salt, course ground black pepper, mustard powder and a little red wine or port.
  2. Spread the paste on all surfaces of the joint.
  3. Seal the joint into a bag
  4. Set temperature to 150 degrees and the time for 25 hours

Finishing Steps

  1. Remove from sealed bag. Reserve any juices for gravy
  2. Place joint into oven at 190 degrees fir about 15 minutes to brown
