- Smoked paprika
- Worcestershire sauce
Directions
- Make paste from salt, pepper, smoked paprika, Worcestershire sauce (port if needed)
- Baste the joint
- Cook for 24 hours at 139
- When time is up, brown in oven at 190 for 10 minutes
- Rest and serve
