Ingredients
- Beef Roasting joint eg Topside, silverside etc
- Salt
- Pepper
- Thyme
- Oil
Directions
- 1. pat dry joint
2. Season with salt, pepper and dried thyme all over
3. Seal Beef in vacuum bag using machine or water displacement method
4. Set Anova to desired temperature, we like just under medium for roast beef.
5. Set timer and cook
6. preheat a solid pan on stove top until smoking, just like cooking a steak.
7. Remove joint from bag and pat it dry.
8. Sear all sides of the joint in the pan until nicely browned.
9. Rest for a few minutes.
10. Serve with Roast Potatoes, Cauliflower Cheese, homemade Yorkshire Puddings (a must!) and gravy.
