  1. Generously season both sides with salt and pepper
  2. Distribute the sliced garlic over one side of the steak.
  3. Place a sprig of fresh rosemary and thyme on top of the garlic
  4. Place the steak in a vacuum seal bag (garlic/herb side down on the textured side of the bag) and seal
  5. When water bath is ready, drop the steak and cook for 1.5-2hrs

Finishing Steps

  1. Pat dry and place in a cast iron skillet with 2TBS unsalted butter, coat steak with butter on both sides.
  2. With a kitchen torch, sear both sides and the edges until crispy.
