Reverse sear steak
Sous vide steak with that grilled crust? YES PLEASE!!!

Ingredients
- Ribeye or Strip steak 1.5” thick
- Salt
- Pepper
- Garlic
Directions
- 12-18 hours before liberally salt then pepper BOTH sides of the steak.
- Place steak on a plate UNCOVERED in the fridge for up to 18 hours. (The salt will pull moisture out of the steak and at around 8 hours the steak will draw that moisture back in, pulling in the seasoning)
- Pull steak from fridge and place in bag (vacuum bag or ziploc… the bag you will cook in) with minced garlic. (If you prefer other seasoning such as added fat like beef tallow, or adding thyme, do so now. I do not… I’m a salt, pepper and garlic kind of person). Then seal your bag.
- Allow steak to sit and come closer to room temp for about 30 minutes.
- With Anova sous vide machine set at 130°F (for medium rare… 125° works here also, but I like the 130° for strip and 125° for ribeye… but both will get you there)
Drop bags in water and let the magic do its thing.
- After 1hr 30mins pull bag from water and allow to rest on cooling rack between 30mins and 1 hour. (This is when you should be starting your sides)
- Depending on what you have to use, you’ll need to preheat your searing surface to approximately the temperature of the sun. I use either a cast iron pan on my propane burner OUTSIDE (this is gonna smoke enough to fill your entire house) or the propane griddle outside. The really dry grey/white discoloration of the pan/surface is what we are looking to achieve.
- While searing mechanism heats up, pull meat from the bag and pat dry with a paper towel. (This is how you’ll get that crust on the steak when searing).
- After you’ve reached super nova temps, place steak on surface. I’ve had my pan hot enough to catch the fat on fire… which is pretty cool! Depending on how hot your surface is, you’re looking for between 20 seconds and 40 seconds per side… the lower the better.
Sear both sides of your steak.
- Rest times not really necessary as everything was already done in the water bath.
- Serve and enjoy!!!
Finishing Steps
- Cut/plate grab with hands… garnish… do what you want, but get this in your mouth!!!
