- Set your Anova Sous Vide Precision Cooker to 135.0ºF / 57.2ºC.
- Set timer for 3 hours.
- Cut racks into 4 x 4 rib sections.
- Spread olive oil and salt and pepper to both sides.
- Add one section along with sprig or rosemary to ziplock bag. Remove air and seal.
- Add bags to water and cook for 3 hours at 135*F.
- Once complete, remove racks and pat dry.
- Sear both sides at high heat in olive oil and butter for 1 minute per side.
- Separate each section into 2-rib sections and plate with garnish/ veg.
