  1. Set your Anova Sous Vide Precision Cooker to 135.0ºF / 57.2ºC.
  2. Set timer for 3 hours.
  3. Cut racks into 4 x 4 rib sections.
  4. Spread olive oil and salt and pepper to both sides.
  5. Add one section along with sprig or rosemary to ziplock bag. Remove air and seal.
  6. Add bags to water and cook for 3 hours at 135*F.
  7. Once complete, remove racks and pat dry.
  8. Sear both sides at high heat in olive oil and butter for 1 minute per side.
  9. Separate each section into 2-rib sections and plate with garnish/ veg.
