- Set your Anova Sous Vide Precision Cooker to 140.0ºF / 60.0ºC.
- Add lamb to bag and cook for 1 1/2 hours on 140. Add lamb to water only when temperature is reached.
- Remove from sous vide bag. Pat dry and ready for cast iron pan.
- Heat cast iron pan until smoking. Sear none side up until brown
- Add butter, rosemary and garlic to cast iron pan
