  1. Clear the bones from meat. Don’t throw it out you can make excellent burgers from it.
  2. Mix garlic and olive oil together and grease the meat.
  3. Mix salt pepper and paprika and cover the meet.
  4. Cover bones with butcher paper then vacum bag it then cook it for 6 hours 137F .
  5. Remove it from bag pet it dry and then sear the rib. I prefer to do it on the grill. 5-10 minutes flip it around so all sides have a nice crust.
  6. Mix butter and parsley and spread it on the meet. Then cover it and let it rest for 20 minutes.
  7. You are ready to serve. Cut it up for even slices. We had sweet potatoes and peas pure as a side.
