Directions

  1. Set your Anova Sous Vide Precision Cooker to 132.0ºF / 55.6ºC.
  2. Cut roast into 2 pieces to suit doneness split. We did 2/3 for rare and 1/3 for medium
  3. Rub spices onto meat. Make small holes in roasts and insert garlic slivers. Bag up
  4. Bath for 10-12 hours.
  5. Save any juices for ajus.

Grill Finish

  1. Take “medium” piece and sear all sides on grill. Let cook for 15 minutes total. Move to indirect heat area of grill
  2. Repeat searing for “rare” piece. Pull both pieces and place on cutting boards. Let rest for 10 minutes.
  3. Carve and serve
